Pago de los Capellanes Crianza 2021 - Magnum is one of the flagship wines of Ribera del Duero DO, crafted exclusively from 100% Tinto Fino (Tempranillo) sourced from selected estate vineyards in Pedrosa de Duero. Aged for 12 months in French oak barrels, it combines fruit purity, elegance, and remarkable balance.

Nose:
It offers clean and intense aromas of red and black fruits, notes of violets and spicy nuances provided by the French oak and a very marked liquorice.
Mouth:
At this stage, it is broad, fresh, balanced, silky but with a lot of structure and power. A wine with sweet tannins and a long finish full of aromas and flavours.
Serving temperature:
It is recommended to serve at 16ºC.
Pairing:
Ideal with grilled Iberian sirloin with confit sauce, ceps and gorgonzola croquettes or confit cod.
Description:

Selection of plots located in Pedrosa de Duero, Anguix and Roa.

 

 

Age:
Average age: 35 years.
Ground:
Clayey-calcareous, sandy, stony, very poor in fertility and low production.
Yield:
6,000 kilograms per hectare
Vinification:

Cold pre-fermentation maceration for 3 days at below 12ºC. Inoculation of selected indigenous yeasts. Fermentation in stainless steel tanks at controlled temperature, with pumping over and phenolic control of the must-wine during maceration. Spontaneous malolactic fermentation at low temperature and periodic stirring of lees in the tank.

Aging:

For 12 months the wine rests in 300-litre French oak barrels.

James Suckling:
Spiced dark cherries, berries and stones on the nose following Through to a structured, full-bodied palate with tight and nicely chewy tannins. Broad, pretty long and very youthful now. Better from 2024.
