Very intense and clean ruby ​​red color with a high layer.
Nose:
Complex and expressive. Memories of ripe red and black fruits predominate combined with more subtle notes of licorice, spices and toast from its aging.
Mouth:
Silky passage and friendly tannins. In its flavor, memories of very fresh ripe fruit predominate, which we already perceive in the olfactory phase, along with a well-balanced acidity.

An excellent wine as an accompaniment to roasts and all types of main dishes based on red meat, as well as game and stews.
Description:

Pago de Los Capellanes Reserva is made with grapes from old vines (more than 80 years old on average) selected from different plots in the Burgos town of Pedrosa del Duero.

These vineyards are located at more than 750 meters above sea level.

Weather:

The 2017 vintage was marked by the severe frost that occurred towards the end of April, with a significant decrease in production and a delay in the vegetative cycle that followed. The latter was later alleviated thanks to the recovery of good temperatures and rainfall, achieving a harvest of extraordinary quality.

Vinification:

Selected harvest in boxes.

Pre-fermentation cold maceration for 3 days below 12 ºC. Sowing of selected indigenous yeasts. Fermentation in stainless steel tanks at controlled temperature, with pumping over and phenolic control of the must-wine in maceration. Spontaneous malolactic fermentation in barrels at low temperature and periodic stirring of lees.

Aging:

The wine rests for 14 months in 225-litre extra-fine-grain French oak barrels.

In January 2019, without any clarification or stabilisation treatment, so it is possible that a natural sediment of colouring matter or tartrates may appear over time.

Decanter:

Lovely! A very traditional style with smoky, leathery and gamey scents and flavours, plus drying tannins. Slightly herbal and volatile, but classic Ribera.
