Pago de los Capellanes Reserva 2018 is an elegant red wine made exclusively from Tinto Fino (Tempranillo) sourced from old, low-yield vineyards in Pedrosa de Duero, at the heart of Ribera del Duero. Its extended aging in new French oak barrels provides depth, complexity, and excellent aging potential.

Very intense and clean ruby ​​red color with a high layer.
Nose:
Complex and expressive. Memories of ripe red and black fruits predominate combined with more subtle notes of licorice, spices and toast from its aging.
Mouth:
Silky passage and friendly tannins. In its flavor, memories of very fresh ripe fruit predominate, which we already perceive in the olfactory phase, along with a well-balanced acidity.

Description:

Pago de Los Capellanes Reserva is made with grapes from old vines (more than 80 years old on average) selected from different plots in the Burgos town of Pedrosa del Duero.

More than 80 years old.
Ground:
Clayey-calcareous, stony, very poor in fertility and low production.
Weather:

Vintage marked by a dry winter and a rainy spring, with cold temperatures that delayed the vegetative cycle.

Yield:
5,000 kilograms per hectare.
Vinification:

Selected harvest in boxes.

Pre-fermentation cold maceration for 3 days below 12 ºC. Sowing of selected indigenous yeasts. Fermentation in stainless steel tanks at controlled temperature, with pumping over and phenolic control of the must-wine during maceration. Spontaneous malolactic fermentation in barrels at low temperature and periodic stirring of lees.

Aging:

Aged for 14 months in 225-litre French oak barrels.

No clarification or stabilisation treatment was carried out, so it is possible that a natural sediment of colouring matter or tartrates may appear over time.

The bodega's Reserva is made with a combination of purchased and its own grapes, drawn from Pedrosa de Duero and the surrounding villages and is a classic expression of the modern Pago de los Capellanes style. Intense, glossy and concentrated, it has incense and wild herb aromas, ripe fig, blackberry and clementine flavours and a frame of stylish, mocha oak.
